Dedham Vale Tomahawk Steak – Aged for up to 28 Days - British Grass Fed Beef 

Coming French-trimmed for great presentation, our tomahawks are well marbled to promise melting quality when cooked, while being on the bone maximises flavour. Enough to feed two adults comfortably.

Sourced from Dedham Vale, our grass-fed beef is aged for between 21 to 28 days to create a natural tenderness, a rounded nutty beef flavour and a distinct aroma. A truly stunning cut of meat, this juicy, melt-in-the mouth showstopper needs little more than piping hot wedges as an accompaniment.

Chilli Hot Horseradish Sauce 185g

A superb hot horseradish which Owen has combined with wholegrain mustard and a little chilli for some extra bite. It's terrific as an accompaniment for roast beef or smoked fish.

Three Peppercorn Sauce with Brandy 

A favourite in the IMP' household, using rich green peppercorns, spicy black pepper and fragrant pink peppercorns along with a good splash of brandy.

Simply warm in the pan after you have cooked your steak and pour over. Also great with duck breast or in a potato gratin.

Cherry Vine Tomatoes 

Perfect as part of a salad, don't be fooled by their size as these little beauties are still bursting with juice and flavour. They have a much sweeter flavour than ordinary tomatoes.

Dingley Dell, Dry Cured Streaky Bacon, Smoked from Free Range Pigs

From free range British pigs that are free to forage on vast open pastures. This delicious streaky bacon is smoked over oak and rather special. It's dry cured, you see, giving it a crispier taste that goes beautifully with the woody smokiness.

The famous LINCOLNSHIRE POACHER VINTAGE Cheese is one of the few cheeses made on the east coast of England, where dairy farming is less prevalent. An award-winning, handmade cheese matured for between 14-16 months. With a smooth texture and a powerful rich flavour. It's densely creamy, and has been compared to a French Comté. Sweet and fruity, but can range towards more deeply savoury notes

COLSTON BASSETT STILTON - An intensely rich and creamy Stilton , with a deep, lingering, complex flavour. Winner of "Gold" at the World Cheese Awards 2018, it is one of the last remaining hand-ladled Stiltons. Hand-ladling produces an intensely rich and creamy cheese; and the Colston Bassett flavour is deep, lingering and complex.

Local milk is left to set under the watchful eye of Billy Kevan, only the fourth head cheese-maker since 1920. The curd is gently cut into small cubes and left to settle. It is then drained and hand-ladled into curd trays. The next morning it is milled and packed into stilton hoops where it will drain naturally before being rubbed and put into the maturing rooms.

After four to six weeks and again one week later, Colston Bassett Stilton is pierced to allow air to get in, so oxygen penetrates the cheese and the blue veins can develop.

Stilton’s origins date back to the 18th century when it was eaten at The Bell Inn, Stilton. Now a protected cheese, Stilton can only be made in the counties of Nottinghamshire, Derbyshire and Leicestershire. Colston Bassett Stilton is often considered to be the best. Little has changed since they started making cheese in 1913, and they still use the milk from four of the original local farms that set up the co-operative in the beginning. The reputation of the dairy has gone from strength to strength, and it is now famous for making Stilton that is velvety and smooth, with a full, well-balanced, sweet and ‘mineral-y’ flavour.

BONTALEGGIO MAURI TALEGGIO is a semi-soft Italian cheese with a strong aroma, but a mild, fruity and slightly tangy flavour.

Taleggio is a semi-soft Italian cheese names after the caves of Val Taleggio. It is one of the oldest soft cheeses. Maturation, which takes place in the caves in Valsassina, takes between 40 and 50 days and a thin crust is formed. The taste is mild and fruity with a slight tangy edge to it and it also has a strong aroma.

GORGONZOLA BONTAZOLA MAURI. Gorgonzola Dolce is made specifically to be soft and creamy. Pasteurised semi-soft full fat blue cheese, a creamy and sweet product of Italy matured in the caves of Valassina in the Alps.

It is delicious spooned onto crusty bread, stirred into risotto or polenta. A wonderfully indulgent cheese.

SICILIAN PECORINO WITH BLACK PEPPER. 

Diforti’s young pecorino cheese is made from 100% pasteurised sheep’s milk from Sicily and matured for 14 days, before the finest of black peppercorns are added to it for that extra addition in flavour. This cheese is a great addition to any authentic Italian food platter and tastes delicious served with Antipasti and Olives.

LINCOLNSHIRE RED

Made by Lincolnshire Poacher and based on an old fashioned traditional Red Leicester recipe with a modern twist. Matured for 6 months (much older than most Red Leicesters). Its colour comes from the addition of annatto to the milk in the vat at the start of cheese making. Annatto is a natural colour widely used in the cheese world and comes from the seed of the Anchiote tree in South America.

Made using vegetarian rennet. It has a moist creamy texture with a delicate buttery flavour, with a nice clean finish that lingers on your palate.

100% Ibérico De Bellota, this jamon is especially cured for up to 5 years for exceptional quality and flavour. It is ready to eat straight from the pack. Impeccably sourced from the famous Ibérico Town of Jabugo, Huelva Spain. The Puche family have been farming for over 50 years with their pigs foraging on freshly fallen acorns for exceptional quality and taste.

Best enjoyed at room temperature, remove from packaging 25 - 30 minutes before serving.

IMP & MAKER Sliced Salchichon 100% Iberico De Bellota

100% Ibérico De Bellota, this salchichon is slowly cured for 3 months for a rich, deep flavour. It is ready to eat straight from the pack and can also be used in cooking but is particularly sublime for tapas. Impeccably sourced from the famous Ibérico Town of Jabugo, Huelva Spain. The Puche family have been farming for over 50 years with their pigs foraging on freshly fallen acorns for exceptional quality and taste.

IMP & MAKER Sliced Chorizo 100% Iberico De Bellota 

100% Ibérico De Bellota, this Chorizo is slowly cured for 3 months with fine Spanish smoked paprika. It is ready to eat straight from the pack and can also be used in cooking but is perfect for your tapas board. Impeccably sourced from the famous Ibérico Town of Jabugo, Huelva Spain. The Puche family have been farming for over 50 years with their pigs foraging on freshly fallen acorns for exceptional quality and taste.

PETERS YARD SOURGHDOUGH CRACKERS SELECTION with Original Sourdough Crackers, Rye & Charcoal Sourdough Crackers, Poppy Seed Sourdough Crackers. The dough is rolled until it is delicate and thin, then dust with rye flour and gently bake for a dappled, crisp and slightly wobbly cracker. Combining Swedish tradition with British craft and natural ingredients these hand-baked sourdough crackers are slowly fermented for 16 hours. No wonder they are Great Taste Award Winning!

BELAZU EARLY HARVEST EXTRA VIRGIN OLIVE OIL.

Early Harvest Extra Virgin Olive Oil uses Arbequina olives which are grown on terraced groves in Lleida, Catalonia. The olives are picked prior to the general harvest and are then crushed by fourth generation olive growers using traditional granite stones. A characterful extra virgin with notes of grass, pepper, almond and banana, it is divine to dip and drizzle.

Early Harvest Extra Virgin Olive Oil won a Guild of Fine Foods' Great Taste star in 2012, and another in 2016.

It is made in Catalonia by our long term olive oil partner, Eduard, from olives that grow on his family's farm. He crushes them with huge granite stones, the old fashioned way: with care, precision and joy.

Arbequina oil is usually made from black olives, but with Early Harvest, we press them when they are not fully ripe, still green and purple. The yield is lower, but the vibrant flavour is worth it, as it stands apart from other Arbequina oils.  

 

 

 

TRUFFLE & PECORINO NUT MIX.

Hand roasted almonds, cashews, pecans and macadamias roasted in Pecorino Romano cheese and truffle. Using small batch techniques and the highest grade cashews, almonds, macademias and pecan, our nut mix is hand roasted and seasoned with Pecorino cheese and white truffle flavour.

SILVER & GREEN CHILLI PEPPER OLIVES.

Pitted green olives prepared by the Silver & Green team. Marinated in a blend of sunflower oil and extra virgin olive oil with chilli and cracked black pepper.

Cartmel is the home of Sticky Toffee. It’s something they are very proud of. They started baking in the shop’s back kitchen and selling it 20 years ago.
